Carole Patricia (LaSota) Kolbeck, 77, died peacefully June 26, 2025, in Phoenix. Carole was born May 13, 1948, in Paterson, New Jersey to John and Patti LaSota. She relocated to Arizona in September 1953 with her parents, one sister (Gail) and one brother (Jack). Another sister, Beverly, came along in 1958.
Carole attended Scottsdale grade schools (K – 3, 7 – 8); Our Lady of Perpetual Help (4 – 6 grades) and graduated Scottsdale High in 1966. She was a member of the cheer squad. She attended University of Arizona and Arizona State University.
Carole worked for years in her dad’s bonding agency. In 1978, she married Mike Kolbeck. They divorced in 1985.
She loved animals, reading – especially history, rock music, and sports. She was a particular fan of the Kennedy dynasty, whose heyday occurred when she was a teenager.
Carole was a fervent Catholic, at one tie aspiring to life as a cloistered nun. She was a unique personality and an asker of many questions, able to attract many with her curiosity and interest in others. She is survived by her sisters, Gail Petersen, and Beverly Groves, and by her brother, Jack, and by five nephews and one niece.
Funeral Mass will be at 11:00 AM on Monday, July 21st, at St. Theresa Catholic Church, 5045 East Thomas Road, Phoenix. In lieu of flowers, donations should be made to a favorite animal rescue or shelter organization.
